Microgreens are the edible young seedlings of immature plants. Microgreens are older than sprouts and much younger than petite or baby greens. Microgreens are specifically selected for their unique color and flavor. These tender greens have two fully developed cotyledon leaves, with or without the emergence of a few first true leaves. It is these young cotyledon leaves, often referred to as the “seed leaves,” that possess higher nutritional densities.
